How Ranges, Stoves, Ovens Work
Combination stoves include both the surface burners and an oven.
The Control Panel
The control panel on each appliance will be different to some extant but will also have some (or a combination) of the following elements:

Oven Control Board
- Thermostat monitors the temperature in your oven together with a long copper tube that transmits the information back to the thermostat by heating up or cooling down. Another kind of thermostat is positioned behind the oven knob. It is an electronic or mechanical model that has a probe attached to a small printed circuit board, and it adjusts the temperature depending on the signals it receives from the probe to the knob.
- Your oven has two kinds of mechanical or electronic clocks. A mechanical clock usually has three dials, start, stop and the clock dial. Start and stop dials are used for timed cooking and self-cleaning tasks. Electronic clocks cannot be fixed and need to be changed once they break.
- Certain stove models have electronic keypads that are used for setting specific actions like timed bake, and self-cleaning times and temperatures. Electronic keypads need to be replaced when they malfunction as they can not be fixed.
- All electric and gas stoves have at least one control switch for the oven or broiler. On some ranges the switch is identical to the one used for the thermostat; on others, the switch is unique. Even if the switch is unique, it still operates in conjunction with the thermostat.
- Most ovens have a light that can be turned one while the oven is in operation. This light is controlled by a switch located in the frame of the oven door. Certain rage models have a light above the range, operated by a switch that is located in the control panel.
- Surface burner switches operate on the same principle that dimmer switches do. Regulating the amount of electricity passing through the switch to the burner, the switches control the adjustment of the temperature setting.
- In addition to time controls, your range model might have other related features. Some common features are a door lock button or a separate switch to toggle between self-clean and normal bake, etc.
- Convection ovens utilize a fan to circulate air and provide consistent temperatures through the unit, permitting food to cook quickly and evenly. This option can be turned on or off by a switch on the control panel.
The Cooktop
- Electric ranges are frequently designed with coils located on top of the stove. The coils have a wire that had been placed on the inside that heats up when electricity is applied and causes coils to glow. Burners, known as euro burners, do not glow although they get just as hot as the more common type of burners. Euro burners are solid, smooth and 6 to 8 inches in diameter. Each euro burner at its center has an internal coil, but it has no moving parts. Smooth top systems are range models that have the burners integrated and concealed into the top of the unit but otherwise work much the same way as the coil type systems.
- Gas burners work in a similar way. Their method of gas delivery works like this: there is one control knob for each burner; each is attached to a small gas valve mounted to the main line; when the valve is turned on, gas flows through into a "venturi" tube; the "venturi" tube mixes the gas with air and creates the proper combustion mix. The standing pilot light (or the igniter) sets the mixture alight when it flows into the burner. The size of the flame is regulated by burner control knobs which also restricts the amount of gas flowing through the valve.
The Area Beneath the Cooktop
- Many electric cook tops have coil burners that have been designed to be raised with the entire cooktop when they need to be cleaned.. When you need to replace the part for your particular type and brand of oven, you will be asked for a model number (and sometimes for a serial number.) This helps reduce the possibility of getting the wrong part or the one designed for a different model. The model and serial number tag for your range are usually located beneath the cooktop.
- Many gas stoves (with non-sealed gas burners) are designed so users can raise the cooktop when they need it to be cleaned and serviced. Burner gas valves and ignition components may also be located here. This is also the most common place for the model and serial number tags to be located.
The Area Behind the Broiler Drawer
For gas range models the safety valve, fuse, spark igniter and other stove elements are often located in this area.
The Back of the Unit
Most of the wiring (for both electric and gas stoves) is located on the back of the range appliance. Steel panels covering the wiring, are designed to protect the user from burn injury and wiring from damage. A number of other components like relays, transformers, self-cleaning switches, and terminal blocks, are also located behind the protective back steel panels.
Keeping your Range, Stove and Oven Well-Maintained
- Control panels on most stoves are made of glass and/or painted metal. To keep the area in pristine shape, non-abrasive cleaners are best for use on these surfaces.
Note: Don't spray cleaners directly onto the control panel; rather spray cleaner on a soft, damp rag, then wipe the surface with the cloth.

Glass Cooktop Cleaner
- Burner drip pans (bowls) - range drip pans or bowls need to be replaced every 2 to 3 years on the average. Once they are stained, you might want to replace them as it is not easy to clean them completely. Stained drip bowls may affect the stove's cooking efficiency, so it's best to keep everything clean and in good shape.

- Knob care - it is safe to clean the knobs on your range with a little dish detergent and a damp rag. If the numbers or lettering have worn away, you may need to replace the knobs. New knobs will update the look of your stove.

Range/Stove/Oven Knob, Dial, or Button Parts
- Oven light bulbs are easy to replace. You may need to remove a glass covering to reach the light bulb. Most interior oven lights require a universal 40 watt appliance bulb.
- To use the self-clean feature on your oven, consult your owner's manual for instructions.

Oven Repair Manuals
The self cleaning oven feature is activated when the interior of the oven reaches a temperature so hot that it incinerates the residue on the inside. The interior of a self-cleaning oven should never be cleaned with a spray cleaner, in fact to be certain that you are doing it right, it is best to refer to your owner's manual or to contact the manufacturer.
- To clean a conventional oven (non-self-cleaning) use one of the many oven cleaners available on the market.

Oven Cleaner
- Burner Elements, like all heating elements, must eventually burn out. When this happens, you can sometimes see the coil blisters and bubbles. Once your heating element burns out, you must replace it as it is not repairable. When this happens, is advisable to change the infinite switch that controls the element at the same time.
